Blackberry syrup

·        Measure the fresh blackberries

·        Add half the amount of water (ie: If 2 cups berries, then 1 cup water.)

·        Bring to a boil and cook for two minutes.

·        Strain through a fine sieve, pressing out as much pulp as possible.

·        Discard the seeds.

·        Measure the strained blackberry juice.

·        Add half the amount of sugar (ie. If 1 cup juice, add ½ cup sugar) plus 1 teaspoon lemon juice.

·        Return to saucepan and cook until the sugar is dissolved.

·        Pour into a clean jar.

·        Refrigerate.
