Shy Lime Pie

(Recipe created by The Black Eddy Restaurant in Westport, Massachusetts and reprinted with permission of Shy Brothers Farm)

Preheat oven to 350⁰F

Ingredients for the Crust:

¾ cups graham cracker crumbs

3 Tablespoons sweet butter

Directions:

1.       In a medium-size bowl, mix the crumbs and butter together.

2.       Pack evenly into a 9-inch pie pan. 

3.       Set aside.

Ingredients for the filling:

14 oz. Cloumage * (Order this cheese at https://www.shybrothersfarm.com/)

½ cup sugar

1 ½ teaspoons corn starch

2 eggs, beaten

1 ½ teaspoons lime zest

1/3 cup freshly squeezed lime juice

Directions:

1.       In a large mixing bowl, add all the ingredients except the lime juice.

2.       Mix until smooth.

3.       Add the juice and mix one additional minute (an electric mixer will make the filling fluffier than hand-mixing.)

4.       Pour filling into the pie shell.

5.       Bake for 25 minutes or until custardy.  Don’t let the surface brown.

6.       Since every oven is different, you may want to try 325⁰F for 40 minutes.

7.       Refrigerate for at least an hour to set fully.

Serves: 6-8
